Carefully brewed with the pure water from the sacred Mount Hakusan, it has no off-flavors. By aging it for three years at low temperatures, it achieves a more refined finish. Its smooth texture and deep ginjo fragrance, resulting from the art of aging, are its distinct characteristics.
石川県で開発された良質の酒米「石川門」。石川の食材で楽しんで頂くため、県内の飲食店のみで提供。爽やかな香りと洋梨のような綺麗な甘みが特長です。/ Ishikawamon is a high-quality sake rice developed in Ishikawa Prefecture. To complement local Ishikawa ingredients, this sake is only available at restaurants within the prefecture. It is characterized by a refreshing aroma and a beautiful sweetness reminiscent of European pears.
苺、黄桃に熱れたバナナのようなアロマが強い。丸みがあり柔らかな口当たりで、芳醇な旨味が口に広がります。後口には長期熟成によるカスタードクリームを思わせる。複雑な風味を残す辛口のお酒です。This sake has strong aromas of strawberry, yellow peach, and ripe banana. It has a round, smooth mouthfeel with a rich umami that spreads across the palate. The finish hints at custard cream, a result of long-term aging. It is a dry sake that leaves behind a complex, lingering flavor.

地元酵母「金沢酵母」と白山の伏流水で仕込みました。ほのかに薫るリンゴの香りと日本酒独特の味わい。フルーティーな純米吟醸です。 / Brewed with local yeast, "Kanazawa yeast," and the pure underground water from Mount Hakusan. It has a faint apple aroma and a distinctive sake flavor. A fruity and well-balanced Junmai Ginjo.
厳冬の時期に低温醗酵でじっくりと仕上げた純米酒。おおらかに米の旨味が広がる「旨い辛口」が特長。純米酒の定番です。/ A Junmai sake carefully brewed through low-temperature fermentation during the harsh winter months. It features a bold, expansive umami from the rice, with a distinctive "umami dry" flavor. A classic example of a dry Junmai sake.
